Thank You and A Recipe to Share

I just want to thank everyone for their good wishes and sympathy in the death of my son-in-law recently. I have been with my daughter and her children quite a lot to try to help them get thru this terrible time in their life.


I received some very sweet comments regarding that and I just want everyone to know how much I appreciate it, as well as the comments sent to my other daughter, Valerie.


Tom, my son-in-law, was a very interesting person, and his memorial service proved that. You can read about that on Valerie's blog if you have not already.


Brenda, and her two children are going to be all right, with the help of God and the comfort of friends and family. We are all hoping that they can move home to Georgia this year once they sell their house.


For all my blogger friends, I will be visiting you this week and catching up with everything you have all been doing.




One of the girls at work today made the most delicious salad! We all enjoyed it so much, that I thought I would share it with you.

TACO SALAD


1 Head Lettuce


10 oz. Grated Cheese


1 bunch Green Onions


2 cans Hot Chili Beans (rinsed and drained)


1 Diced Tomato


3/4 Cup Catalina Dressing


Crushed Frito or Dorito Chips


Break up lettuce into small pieces. Place into salad bowl. Add cheese, onions, chili beans and tomato.


Just before serving, add crushed Frito or Dorito chips and the Catalina dressing. (It is crucial to add these just before serving so that the chips will be crunchy.)


Serves 6 -8


This recipe is not complicated, but it will surprise you at how very tasty it is.

I'm sure your daughter very much appreciated you being there for her. My heart goes out to her and the children but as you say, with the love of friends and family, they will be ok:-)

This salad sounds delicious. I've been looking for some new recipes to try on my diet and I think this one will work - I'll try to find some "lite" catalina dressing. blessings, marlene
